How to Can Tomatoes for Beckie

  • Wash them well.
  • Pour boiling water over them so their skins will come off easier. Soak for 1-2 minutes but not too long or they will cook (the skins will crack and wrinkle). Drain and rinse with cold water so they are easier to handle.
  • Remove skins and cores.
  • Slice or Quarter if you want as you stuff them into bottles up to the bottom ring.
  • Smash them gently (I know it doesn't sound gentle) to get all the air bubbles out and to cover them in their own juices.
  • Add 1 teaspoon of lemon juice (because then new hybrid tomatoes are so low in acid) and 1/2 teaspoon of salt.
  • Put on lids. Put in water processor to cover 1 inch above the jars.
  • When water boils set timer for 45 minutes.
  • Done. Put on shelf and take a picture then open and eat!

Thanks you so much! It sounds easier than I thought it would be. My sister just gave me a bag of home grown tomatoes (is it Ramona that calls them Tommy Toes?). Tempting...
